data-contrast=\"none\">\u00a0after\u00a0<\/span><span data-contrast=\"none\">he<\/span><span data-contrast=\"none\">\u00a0<\/span><span data-contrast=\"none\">observed\u00a0<\/span><span data-contrast=\"none\">that\u00a0<\/span><span data-contrast=\"none\">raw\u00a0<\/span><span data-contrast=\"none\">kiwifruit\u00a0<\/span><span data-contrast=\"none\">prevents the setting of jelly<\/span><span data-contrast=\"none\">, due to its digestion of\u00a0<\/span><span data-contrast=\"none\">gelatin<\/span><span data-contrast=\"none\">.<\/span><span data-contrast=\"none\">\u00a0Actinidin can also be referred to as\u00a0<\/span><i><span data-contrast=\"none\">Actinidia\u00a0<\/span><\/i><span data-contrast=\"none\">anionic protease,\u00a0<\/span><span data-contrast=\"none\">actini<\/span><span data-contrast=\"none\">dain<\/span><span data-contrast=\"none\">\u00a0and Act d1.<\/span><span data-contrast=\"none\">\u00a0Its official enzyme number is E.C. 3.4.22.14.<\/span><span data-ccp-props=\"\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"none\">Actinidin constitutes up to 40% of the soluble protein in the green Hayward<\/span><span data-contrast=\"none\">\u00a0<\/span><span data-contrast=\"none\">kiwifruit\u00a0<\/span><span data-contrast=\"none\">cultivar<\/span><span data-contrast=\"none\">\u00a0<\/span><span aria-label=\"Rich text content control\"><span data-contrast=\"none\">(Boland, 2013)<\/span><\/span><span data-contrast=\"none\">.\u00a0<\/span><span data-contrast=\"none\">Actinidin has\u00a0<\/span><span data-contrast=\"none\">been found to\u00a0<\/span><span data-contrast=\"none\">have significant effects on the digestion of food proteins.\u00a0<\/span><span data-ccp-props=\"\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"none\">S<\/span><span data-contrast=\"none\">ince<\/span><span data-contrast=\"none\">\u00a0its discovery in 1959<\/span><span data-contrast=\"none\">, a<\/span><span data-contrast=\"none\">ctinidin\u00a0<\/span><span data-contrast=\"none\">has been the subject of a number of studies assessing its\u00a0<\/span><span data-contrast=\"none\">effect on\u00a0<\/span><span data-contrast=\"none\">the digestion of\u00a0<\/span><span data-contrast=\"none\">proteins both\u00a0<\/span><i><span data-contrast=\"none\">in vitro\u00a0<\/span><\/i><span data-contrast=\"none\">and\u00a0<\/span><i><span data-contrast=\"none\">in vivo<\/span><\/i><i><span data-contrast=\"none\">\u00a0<\/span><\/i><span aria-label=\"Rich text content control\"><span data-contrast=\"none\">(Boland, 2013)<\/span><\/span><i><span data-contrast=\"none\">\u00a0<\/span><\/i><span data-contrast=\"none\">(Kaur & Boland, 2013)<\/span><span aria-label=\"Rich text content control\"><i><span data-contrast=\"none\">\u00a0<\/span><\/i><span data-contrast=\"none\">(Kaur, Rutherfurd, Moughan, Drummond, & Boland, 2010)<\/span><\/span><span aria-label=\"Rich text content control\"><i><span data-contrast=\"none\">\u00a0<\/span><\/i><span data-contrast=\"none\">(Montoya, et al., 2014)<\/span><\/span><span aria-label=\"Rich text content control\"><i><span data-contrast=\"none\">\u00a0<\/span><\/i><span data-contrast=\"none\">(Montoya, et al., 2013)<\/span><\/span><span aria-label=\"Rich text content control\"><i><span data-contrast=\"none\">\u00a0<\/span><\/i><span data-contrast=\"none\">(Rutherfurd, et al., 2011)<\/span><\/span><span aria-label=\"Rich text content control\"><i><span data-contrast=\"none\">\u00a0<\/span><\/i><span data-contrast=\"none\">(Montoya, Cabrera, Zou, Boland, & Moughan, 2018)<\/span><\/span><i><span data-contrast=\"none\">.\u00a0<\/span><\/i><span data-contrast=\"none\">Actinidin\u00a0<\/span><span data-contrast=\"none\">has a very broad specificity compared to pepsin and can hydroly<\/span><span data-contrast=\"none\">z<\/span><span data-contrast=\"none\">e\u00a0<\/span><span data-contrast=\"none\">a wide range of peptide bonds that are unavailable to pepsin.\u00a0<\/span><span data-contrast=\"none\">This action may then open up more\u00a0<\/span><span data-contrast=\"none\">sites for pepsin activity.\u00a0<\/span><span data-contrast=\"none\">The studies show\u00a0<\/span><span data-contrast=\"none\">there is c<\/span><span data-contrast=\"none\">lear evidence that both green\u00a0<\/span><span data-contrast=\"none\">kiwifruit<\/span><span data-contrast=\"none\">, and the enzyme actinidin\u00a0<\/span><span data-contrast=\"none\">extracted from green kiwifruit<\/span><span data-contrast=\"none\">, can provide enhanced upper-tract digestion (particularly in the stomach) of a variety of food proteins, which lends support to a role for dietary kiwifruit as a digestive aid.<\/span><span data-ccp-props=\"\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"none\">In particular, the research has shown that actinidin can\u00a0<\/span><span data-contrast=\"none\">significantly enhance the\u00a0<\/span><span data-contrast=\"none\">digest<\/span><span data-contrast=\"none\">ion<\/span><span data-contrast=\"none\">\u00a0<\/span><span data-contrast=\"none\">of\u00a0<\/span><span data-contrast=\"none\">dairy proteins\u00a0<\/span><span data-contrast=\"none\">such as\u00a0<\/span><span data-contrast=\"none\">casein (the major milk protein,\u00a0<\/span><span data-contrast=\"none\">found in\u00a0<\/span><span data-contrast=\"none\">yoghurt<\/span><span data-contrast=\"none\">, cheese<\/span><span data-contrast=\"none\">\u00a0and cottage cheese)<\/span><span data-contrast=\"none\">,\u00a0<\/span><span data-contrast=\"none\">animal meat proteins (<\/span><span data-contrast=\"none\">from\u00a0<\/span><span data-contrast=\"none\">beef,\u00a0<\/span><span data-contrast=\"none\">chicken<\/span><span data-contrast=\"none\">\u00a0and fish)<\/span><span data-contrast=\"none\">,<\/span><span data-contrast=\"none\">\u00a0<\/span><span data-contrast=\"none\">wheat gluten<\/span><span data-contrast=\"none\">, and<\/span><span data-contrast=\"none\">, to a lesser extent,\u00a0<\/span><span data-contrast=\"none\">help to digest<\/span><span data-contrast=\"none\">\u00a0<\/span><span data-contrast=\"none\">zein (corn protein)<\/span><span data-contrast=\"none\">,<\/span><span data-contrast=\"none\">\u00a0soy protein isolate, whey protein isolate (the minor protein fraction from milk),\u00a0<\/span><span data-contrast=\"none\">and\u00a0<\/span><span data-contrast=\"none\">collagen (connective tissue protein)<\/span><span data-contrast=\"none\">.<\/span><span data-ccp-props=\"\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"none\">Research has also shown that<\/span><span data-contrast=\"none\">\u00a0the presence of actinidin can increase the rate of\u00a0<\/span><span data-contrast=\"none\">stomach<\/span><span data-contrast=\"none\">\u00a0emptying.\u00a0<\/span><span data-contrast=\"none\">This\u00a0<\/span><span data-contrast=\"none\">is important\u00a0<\/span><span data-contrast=\"none\">as the<\/span><span data-contrast=\"none\">\u00a0rate of protein digestion and emptying of the stomach influences the rate of\u00a0<\/span><span data-contrast=\"none\">disappearance of protein in the small intestine and the subsequent appearance of amino acids in the blood.<\/span><span data-contrast=\"none\">\u00a0The faster an amino acid can be absorbed<\/span><span data-contrast=\"none\">\u00a0into the bloodstream<\/span><span data-contrast=\"none\">, the quicker it can be utilized<\/span><span data-contrast=\"none\">. There is good evidence that the rapid appearance of some amino acids in the blood leads to increased synthesis of muscle\u00a0<\/span><span data-contrast=\"none\">tissue,\u00a0<\/span><span data-contrast=\"none\">\u00a0which<\/span><span data-contrast=\"none\">\u00a0is\u00a0<\/span><span data-contrast=\"none\">useful for ath<\/span><span data-contrast=\"none\">letes wanting to build<\/span><span data-contrast=\"none\">\u00a0or\u00a0<\/span><span data-contrast=\"none\">repair muscle\u00a0<\/span><span data-contrast=\"none\">and for elderly people suffering from sarcopenia (muscle wasting)<\/span><span data-contrast=\"none\">, for example.<\/span><span data-ccp-props=\"\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"none\">The\u00a0<\/span><span data-contrast=\"none\">increased rate of digestion and stomach emptying can assist reducing that feeling of overfullness after a high protein meal.
