of the human body<\/span><span data-contrast=\"none\">\u00a0\u2013<\/span><span data-contrast=\"none\">\u00a0our<\/span><span data-contrast=\"none\">\u00a0<\/span><span data-contrast=\"none\">muscle, skin, hair<\/span><span data-contrast=\"none\">, hormones,\u00a0<\/span><span data-contrast=\"none\">and\u00a0<\/span><span data-contrast=\"none\">enzymes<\/span><span data-contrast=\"none\">, for example,<\/span><span data-contrast=\"none\">\u00a0<\/span><span data-contrast=\"none\">are<\/span><span data-contrast=\"none\">\u00a0made from protein<\/span><span data-contrast=\"none\">.\u00a0<\/span><span data-contrast=\"none\">Proteins<\/span><span data-contrast=\"none\">\u00a0<\/span><span data-contrast=\"none\">are polymers<\/span><span data-contrast=\"none\">\u00a0(polypeptides)\u00a0<\/span><span data-contrast=\"none\">made up of<\/span><span data-contrast=\"none\">\u00a0sequences<\/span><span data-contrast=\"none\">\/chains data-contrast=\"none\">T<\/span><span data-contrast=\"none\">h<\/span><span data-contrast=\"none\">ere are 20<\/span><span data-contrast=\"none\">\u00a0amino acids that form the building blocks for proteins, but t<\/span><span data-contrast=\"none\">he body\u00a0<\/span><span data-contrast=\"none\">can\u00a0<\/span><span data-contrast=\"none\">only\u00a0<\/span><span data-contrast=\"none\">make 11 of\u00a0<\/span><span data-contrast=\"none\">the<\/span><span data-contrast=\"none\">se<\/span><span data-contrast=\"none\">\u00a0<\/span><span data-contrast=\"none\">\u2013<\/span><span the other two being carbohydrate and fat.\u00a0<\/span><span data-contrast=\"none\">Dietary s<\/span><span data-contrast=\"none\">ources of protein include meat<\/span><span data-contrast=\"none\">, dairy, fish, eggs, legumes,\u00a0<\/span><span data-contrast=\"none\">nuts<\/span><span data-contrast=\"none\">\u00a0and grains.\u00a0<\/span><span data-ccp-props=\"\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"none\">The digestion of dietary proteins in humans begins in the stomach where the initial breakdown is done via the action of pepsin (a protease) and hydrochloric acid<\/span><span data-contrast=\"none\">\u00a0(stomach acid)<\/span><span data-contrast=\"none\">. The resulting peptides and protein fragments make their way to the small intestine where further enzymes (<\/span><span data-contrast=\"none\">e.g.<\/span><span data-contrast=\"none\">\u00a0trypsin<\/span><span data-contrast=\"none\">, chymotrypsin<\/span><span data-contrast=\"none\">) continue to digest the peptides and fragments into amino acids and small peptides, which can then be absorbed into the bloodstream.\u00a0<\/span><span data-ccp-props=\"\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"none\">Once absorbed the amino acids and small peptides are\u00a0<\/span><span data-contrast=\"none\">utilised as building blocks by cells in the body to create new proteins, such as enzymes, antibodies, structural proteins (<\/span><span data-contrast=\"none\">e.g.<\/span><span data-contrast=\"none\">\u00a0keratin, collagen and elastin), and messenger proteins (e.g. hormones), or they can be broken down to produce energy.<\/span><span data-ccp-props=\"\">\u00a0<\/span><\/p>\n<h4>Poor protein digestion<\/h4>\n<p><span data-contrast=\"none\">Some dietary proteins are more readily digested than others and the presence of a significant amount of poorly digested dietary protein in the stomach can reduce the rate of emptying of the stomach leading to that overfull feeling<\/span><span data-contrast=\"none\">\/bloating.<\/span><span data-contrast=\"none\">\u00a0This is particularly an issue\u00a0<\/span><span data-contrast=\"none\">for<\/span><span data-contrast=\"none\">\u00a0people\u00a0<\/span><span data-contrast=\"none\">with compromised digestion, such as elderly people, who tend to produce less pepsin<\/span><span data-contrast=\"none\">\u00a0and<\/span><span data-contrast=\"none\">\/or<\/span><span data-contrast=\"none\">\u00a0stomach acid<\/span><span data-contrast=\"none\">, or people on proton pump inhibitor drugs, which reduce the production of acid in the stomach.<\/span><span data-contrast=\"none\">\u00a0<\/span><span data-ccp-props=\"\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"none\">U<\/span><span data-contrast=\"none\">ndigested protein<\/span><span data-contrast=\"none\">\u00a0and peptides that<\/span><span data-contrast=\"none\">\u00a0<\/span><span data-contrast=\"none\">reach the colon\u00a0<\/span><span data-contrast=\"none\">are<\/span><span data-contrast=\"none\">\u00a0fermented by the gut microbiota.\u00a0<\/span><span data-contrast=\"none\">Fe<\/span><span data-contrast=\"none\">rmentation of protein produces<\/span><span data-contrast=\"none\">\u00a0several\u00a0<\/span><span data-contrast=\"none\">byproducts<\/span><span data-contrast=\"none\">\u00a0including<\/span><span data-contrast=\"none\">\u00a0ammonia<\/span><span data-contrast=\"none\">,\u00a0<\/span><span data-contrast=\"none\">hydrogen sulphide<\/span><span data-contrast=\"none\">,\u00a0<\/span><span data-contrast=\"none\">short chain fatty acids<\/span><span data-contrast=\"none\">\u00a0(SCFA), branched chain fatty acids (BCFA)<\/span><span data-contrast=\"none\">, amines,\u00a0<\/span><span data-contrast=\"none\">phenols<\/span><span data-contrast=\"none\">\u00a0and indoles<\/span><span data-contrast=\"none\">.<\/span><span data-contrast=\"none\">\u00a0Too much protein fermentation<\/span><span data-contrast=\"none\">\u00a0(which can occur with high protein diets or poor digestion of protein)<\/span><span data-contrast=\"none\">\u00a0<\/span><span data-contrast=\"none\">can result in an overabundance of the fermentation\u00a0<\/span><span data-contrast=\"none\">byproducts<\/span><span data-contrast=\"none\">\u00a0<\/span><span data-contrast=\"none\">which may cause inflammation (<\/span><span data-contrast=\"none\">potentially leading to a \"leaky gut\") and excessive proliferation of colonocytes\u00a0<\/span><span data-contrast=\"none\">(potentially leading to colorectal cancer)<\/span><span data-contrast=\"none\">\u00a0<\/span><span data-contrast=\"none\">[1]<\/span><span data-contrast=\"none\">.<\/span><span data-contrast=\"none\">\u00a0Increased fibre fermentation in the colon\u00a0<\/span><span data-contrast=\"none\">with increased SCFA<\/span><span data-contrast=\"none\">\u00a0(especially butyrate)<\/span><span data-contrast=\"none\">\u00a0production\u00a0<\/span><span data-contrast=\"none\">however can\u00a0<\/span><span data-contrast=\"none\">be protective against\u00a0<\/span><span intolerant\u00a0<\/span><span data-contrast=\"none\">or sensitive\u00a0<\/span><span data-contrast=\"none\">to\u00a0<\/span><span data-contrast=\"none\">certain\u00a0<\/span><span data-contrast=\"none\">proteins.\u00a0<\/span><span data-contrast=\"none\">The most\u00a0<\/span><span data-contrast=\"none\">well-known<\/span><span data-contrast=\"none\">\u00a0is gluten intolerance<\/span><span data-contrast=\"none\">\/sensitivity<\/span><span data-contrast=\"none\">, but\u00a0<\/span><span data-contrast=\"none\">casein\u00a0<\/span><span data-contrast=\"none\">may<\/span><span data-contrast=\"none\">\u00a0also pose an issue for some.\u00a0<\/span><span data-ccp-props=\"\">\u00a0<\/span><\/p>\n<h4>Casein intolerance<\/h4>\n<p><span data-contrast=\"none\">Casein is\u00a0<\/span><span data-contrast=\"none\">the<\/span><span data-contrast=\"none\">\u00a0major milk protein.\u00a0<\/span><span data-contrast=\"none\">Research suggests t<\/span><span data-contrast=\"none\">he A1 type of beta\u00a0<\/span><span data-contrast=\"none\">may<\/span><span data-contrast=\"none\">\u00a0<\/span><span data-contrast=\"none\">cause intolerance reactions<\/span><span data-contrast=\"none\">\u00a0[2<\/span><span data-contrast=\"none\">,3]<\/span><span data-contrast=\"none\">.<\/span><span data-contrast=\"none\">\u00a0In contrast, the A2\u00a0<\/span><span data-contrast=\"none\">type and whey (the\u00a0<\/span><span data-contrast=\"none\">minor milk protein) have not been associated with\u00a0<\/span><span data-contrast=\"none\">reactions and appear to be well-tolerated<\/span><span data-contrast=\"none\">\u00a0<\/span><span data-contrast=\"none\">[4,5]<\/span><span data-contrast=\"none\">.<\/span><span data-contrast=\"none\">\u00a0<\/span><span data-contrast=\"none\">\u00a0<\/span><span data-ccp-props=\"\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"none\">When casein is digested,\u00a0<\/span><span data-contrast=\"none\">an opiate-like substance,\u00a0<\/span><span data-contrast=\"none\">beta-casomorphin-7<\/span><span data-contrast=\"none\">, is released.\u00a0<\/span><span data-contrast=\"none\">It is thought that this compound is responsible for the intolerance reactions\u00a0<\/span><span data-contrast=\"none\">observed with casein\u00a0<\/span><span data-contrast=\"none\">by stimulating histamine release<\/span><span data-contrast=\"none\">\u00a0<\/span><span data-contrast=\"none\">[3]<\/span><span data-contrast=\"none\">.\u00a0<\/span><span data-contrast=\"none\">Histamine is involved in the inflammatory response to allergens.\u00a0<\/span><span data-ccp-props=\"\">\u00a0<\/span><\/p>\n<h4><span data-contrast=\"none\">Gluten<\/span><span data-contrast=\"none\">\u00a0Intolerance<\/span><span data-ccp-props=\"\">\u00a0<\/span><\/h4>\n<p><span data-contrast=\"none\">Many people experience digestive<\/span><span data-contrast=\"none\">\u00a0and other health problems when they eat gluten\/wheat.\u00a0<\/span><span data-contrast=\"none\">Gluten is\u00a0<\/span><span data-contrast=\"none\">a<\/span><span data-contrast=\"none\">\u00a0group of<\/span><span data-contrast=\"none\">\u00a0protein<\/span><span data-contrast=\"none\">s<\/span><span data-contrast=\"none\">\u00a0found in wheat,\u00a0<\/span><span data-contrast=\"none\">barley<\/span><span data-contrast=\"none\">\u00a0and rye<\/span><span data-contrast=\"none\">.<\/span><span data-contrast=\"none\">\u00a0Wheat is\u00a0<\/span><span data-contrast=\"none\">used as an ingredient in\u00a0<\/span><span data-contrast=\"none\">a large number of<\/span><span data-contrast=\"none\">\u00a0foods, including\u00a0<\/span><span data-contrast=\"none\">breads, pastas<\/span><span data-contrast=\"none\">,\u00a0<\/span><span data-contrast=\"none\">cereals<\/span><span data-contrast=\"none\">, biscuits, crackers, cakes and pastries<\/span><span data-contrast=\"none\">, but it also shows up in\u00a0<\/span><span data-contrast=\"none\">a lot of convenience foods, like soups, sauces, spices<\/span><span data-contrast=\"none\">,<\/span><span data-contrast=\"none\">\u00a0drinks, processed meats and ready-made meals.\u00a0<\/span><span data-contrast=\"none\">Barley\u00a0<\/span><span data-contrast=\"none\">is mainly used in beer<\/span><span data-contrast=\"none\">\u00a0and foods containing malt, but\u00a0<\/span><span data-contrast=\"none\">can\u00a0<\/span><span data-contrast=\"none\">also\u00a0<\/span><span data-contrast=\"none\">be found\u00a0<\/span><span data-contrast=\"none\">in soups (<\/span><span data-contrast=\"none\">e.g.<\/span><span data-contrast=\"none\">\u00a0pearled barley).\u00a0<\/span><span data-contrast=\"none\">Rye is found in bread<\/span><span data-contrast=\"none\">, crackers, cereals,\u00a0<\/span><span data-contrast=\"none\">beer<\/span><span data-contrast=\"none\">\u00a0and whiskey.\u00a0<\/span><span data-ccp-props=\"\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"none\">Gluten intolerance is experienced by a significant proportion of the population with prevalence rates of up to 13%<\/span><span data-contrast=\"none\">\u00a0<\/span><span data-contrast=\"none\">[6]<\/span><span data-contrast=\"none\">.<\/span><span data-contrast=\"none\">\u00a0Gluten intolerance can present as:<\/span><span data-ccp-props=\"\">\u00a0<\/span><\/p>\n<ul>\n<li data-leveltext=\"\uf0b7\" data-font=\"Symbol\" data-listid=\"32\" aria-setsize=\"-1\" data-aria-posinset=\"1\" data-aria-level=\"1\"><span data-contrast=\"none\">Celiac disease (CD)<\/span><span data-contrast=\"none\">\u00a0\u2013 an autoimmune condition whereby the ingestion of gluten causes damage to the small intestine.\u00a0<\/span><span data-ccp-props=\"\">\u00a0<\/span><\/li>\n<li data-leveltext=\"\uf0b7\" data-font=\"Symbol\" data-listid=\"32\" aria-setsize=\"-1\" data-aria-posinset=\"2\" data-aria-level=\"1\"><span data-contrast=\"none\">N<\/span><span data-contrast=\"none\">on-celiac gluten sensitivity (NCGS)<\/span><span data-contrast=\"none\">\u00a0\u2013\u00a0<\/span><span data-contrast=\"none\">a condition that produces symptoms\u00a0<\/span><span data-contrast=\"none\">similar to<\/span><span data-contrast=\"none\">\u00a0those seen in CD, however unlike CD\u00a0<\/span><span data-contrast=\"none\">there is no<\/span><span data-contrast=\"none\">\u00a0damage\u00a0<\/span><span data-contrast=\"none\">to\u00a0<\/span><span data-contrast=\"none\">the small intestine,\u00a0<\/span><span data-contrast=\"none\">it\u00a0<\/span><span data-contrast=\"none\">is not autoimmune, nor does it have a genetic component<\/span><span data-contrast=\"none\">.\u00a0<\/span><span data-ccp-props=\"\">\u00a0<\/span><\/li>\n<li data-leveltext=\"\uf0b7\" data-font=\"Symbol\" data-listid=\"32\" aria-setsize=\"-1\" data-aria-posinset=\"3\" data-aria-level=\"1\"><span data-contrast=\"none\">W<\/span><span data-contrast=\"none\">heat allergy<\/span><span data-ccp-props=\"\">\u00a0<\/span><\/li>\n<\/ul>\n<p><span data-contrast=\"none\">The adverse effects of gluten are understood to be largely due to\u00a0<\/span><span data-contrast=\"none\">a<\/span><span data-contrast=\"none\">\u00a0reaction to proline-rich peptides that are not normally digested in the gut<\/span><span data-contrast=\"none\">.
